Israeli Salad

I’ve always been obsessed with Israeli salad. It’s so fresh tasting and since it doesn’t use any lettuce, it’s a nice break from normal salads!


While a typical Israeli salad uses cucumber, tomato, and onion, you really can use any local produce with the dressing! This salad is packed with fiber and is even more delicious with some hummus on top, which adds both protein and fiber!


Ingredients:

1. 4 small cucumbers

2. 2 medium sized red tomatoes

3. 2 tsp olive oil (can sub any other unflavored oil like vegetable or grapeseed)

4. ¼ cup lemon juice (can sub lime juice)

5. 1 tsp dried parsley 

6. Salt/pepper to taste 


Directions:

1. Cut the tomatoes and cucumbers into small cubes.

2. Mix together the ingredients for the dressing.

3. Toss the dressing on the salad.
