Cauliflower Oats

Do you ever wake up in the morning craving something sweet, but want to remain healthy? Then, I’ve got the perfect recipe for you… cauliflower oats! After seeing so many oat bowls trending on instagram, I decided to create a healthier version using one of my all time favorite ingredients: cauliflower rice!


This recipe is so amazing because cauliflower rice is the only ingredient you really need. Everything else can be swapped out easily with substitutions. Also you can make this delicious recipe at any time of year, as you can use frozen cauliflower rice, or grind up fresh cauliflower yourself in the food processor!


Ingredients:

1. 1 cup cauliflower rice (this can be frozen or can be made fresh in the food processor)

2. 1 cup plant-based milk (examples of this are almond milk, soy milk, cashew milk, coconut milk, or flax milk)

3. Optional: 1/4 mashed banana

4. Optional: flavored protein powder (this can be whatever flavor you like, and it likely will add fiber and protein to keep you full for longer, sub 1 tsp maple syrup for sweetness)

5. Optional: ¼ tsp psyllium husk powder (this can be left out, as it just helps thicken the oats and adds fiber) 

6. Optional: seeds (this can be flaxseeds, chia seeds, zen basil seeds, etc. These will add extra fiber to your oats)

7. Optional add ins or toppings: unsweetened cocoa powder, vegan granola, fruit, cinnamon, vanilla extract, maple syrup, etc. 


Directions:

1. Throw everything into a simmering pot, and stir well until the oats are thickened!
