Vegetable Salad

Need a new salad recipe? Well this one is packed with antioxidants and fiber! I was tired of plain old salad recipes, so I made this one to have a different flavor and texture. You all will love it. 


Salads are so easy because they can just be thrown together! This recipe can be easily adjusted, and you can just use what’s available at your local farmstand. 


Ingredients

1. 1 head of ground or chopped kale (can use any lettuce you have)

2. 1 pound of brussels sprouts 

3. ¼ cup apple cider vinegar (you can use any vinegar such as balsamic vinegar or red wine vinegar)

4. 2 tbsp olive oil (can use any unflavored oil like grapeseed oil)

5. 1 tbsp dijon mustard (can use any mustard you have)

6. Salt / pepper 

7. Optional: ½ cup grated parmesan cheese 


Directions

1. Grind the kale (or any other lettuce) and brussel sprouts in the food processor, or chop them super fine. 

2. Whisk together the ingredients for the dressing.

3. Mix the salad and the dressing together.
